Pigs

We raise pigs for pork for ourselves and to order. We are not certified organic but we do raise our pork in the healthiest way we know. They have access to a large pasture and have good quality feed available at all times. Please Contact Us with any specific questions you may have. Pork can be ordered as a whole pig or 1/2 a pig. Pork must be picked up in the Penn Yan, NY area unless prior arrangements are agreed upon. Price for 2003 has not been determined yet but for 2002 it was about $1.40/lb hanging weight including butchering, cutting, wrapping and freezing. Here is an example of the meat that might be in a 210 lb live weight pig. Once it is butchered, the hanging weight would be approximately 150 lbs (this is the weight your cost is figured from). Depending on how you have it cut, you might get: 27 lbs of ham (fresh steaks, roasts or smoked), 24 lbs of loin roasts or chops, 24 lbs of bacon, 6 lbs of spare ribs, 10 lbs of boston butt, 9 lbs of picnic shoulder, 4 lbs of hocks, 22 lbs of miscellaneous cuts or sausage trimmings. The remaining 24 lbs is bones and fat. We are currently taking orders for Summer or Fall 2003 delivery of pork.
